girls night out (kinda)

my mom packs me breakfast and now lunch every day, and she's been surprisingly making some really fantastic salads! yesterday was mixed greens and baby spinach with baby carrots, mushrooms, red onion, walnuts, croutons and basil/sundried tomato feta cheese, topped with lime juice and mrs. dash... SO YUMMY! mmmm having another one today (sans feta), but still very VERY tasty.

mmmmmmmmmmmmmmmm vegetarian food! how i miss thee... a few years ago i worked at my friend's fabulous vegetarian restaurant, and since i was there all the time i thought, "hell, i might as well try it!" for two years i was a lacto-ovo-pesco vegetarian (i.e. i still ate milk, egg, and fish). i never felt healthier, honestly. i wish i could do it again, but my mom thinks "vegetarian" means "halal chicken vegetable soup" (my mom said "muslims are vegetarian and they eat meat!" and i responded "mom, that just makes them muslim!") and my carnivore boyfriend is a vegetable-phobe. *sigh* o well. i can do my best with breakfast and lunch, i guess.

yummy lunch... the skin on the duck was sooooooooooooooo crispy. i wish i could each duck more, but alas... fatty, fatty, fatty. a few hours later after a nice little nap, i woke up hungry! i was kinda grossed out by that.

by the time the test was over, it was still early, so since monday used to be our WWE:RAW night i went over to jason's. he cooked his wannabe zippy's chili which was great, as usual. but there it goes again.... my feeling like i don't get enough veggies in my diet. bah... onto the normal schedule:

i ended up staying over at jason's last night and took the wrong train home. i figured that was ok, though, since it's not too bad of a walk back to the house... so i walked from the jamaica train station home. took me about 15 minutes, which isn't so bad. maybe i should do that diabetes walk next month? *sigh* i dunno... still thinking about it.

i'm kinda annoyed no one wants to do it with me. i've asked so many people, announced it on several forums... but no one wants to go with me. don't get me wrong, i would love to do it with my mother, since last year we talked about it and she said she wanted to do it, but honestly she's kinda going to slow me down. oh well, looks like me and my ipod shuffle for that one.

hmm... maybe i should do the queens walk for diabetes? that's less than a month away, though.... hmm....

this is the first time i've been home on a saturday morning, so it was nice to be able to wake up to breakfast already being made. heh... so it looks like i went a little overboard for breakfast, but it's ok - i ate around 12:45, so that can be considered "brunch" right? hehe...

*phew* a slightly loaded dinner as well! oh my. must calm myself when i'm at the boyfriend's. i usually only eat meat when i'm over at his place. it's the only thing we have here, so it's really hard to change my diet, really. plus, he's like mega-carnivore, so whenever i prep anything, it's usually a meat dinner. *sigh* oh well. i'm psyched to get my exercise plan going. i looked in the mirror today and noticed my belly has shrunk! not bad, not bad...

food journal begins

so apparently, according to all these health magazines, starting a food journal is supposed to keep me in check with my eating. time to jump on the bandwagon, i guess.

my cousin has asked me to be in her wedding party, so now i need to look fantas-cular for the occasion. so... let's start the clock again, huh? lol... countdown to my cousin's wedding, october 8th. i think it should be reasonable to be down to 120 by the time september rolls around... hmm...

i think the funniest thing about this week's leap in motivation is that it's spring break so my gym class doesn't meet. ha. oh well. next week, it is.
